Mushroom Soup

Mushrooms are one of my favorite foods. Just having recently discovered this in the last couple years. I am also lactose intolerant which is a hindrance sometimes when trying to find a good mushroom soup recipe, since most of them are cream based. I came across this recipe for a mushroom soup made without cream from allrecipes.com, which is an excellent resource for finding new recipes. I made this soup with some toasted garlic pita chips which provided the perfect texture balance to go with the soup. Out of 5 stars, I would give it 4. Enjoy it.

Vacation Continues and ends...

When last I left you, we finished with Tues the 24th.

Wednesday the 25th: Gorgeous morning to wake up to, walked the beach a little in the morning and then packed up the beach gear to head to Ocracoke Island.

To get to Ocracoke you drive to the end of Hatteras Island and take a 40 minute ferry ride.

Anyway, the village of Ocracoke is 13 miles from the Ferry Terminal once you land on the Island so you have a little drive. We stopped at Howard's Pub and Raw Bar, and I couldn't have been more impressed. Crab cake sandwich was delightful and they had the best hand-cut fries I have ever had. From lunch we drove around the village, but we were not impressed. I guess we were expecting it to be more like Cape May, for those of you who have been there. Oh well, let's hit the beach. The beach was great on Ocracoke, it reminded me of the Caribbean beaches. The water was not as clear but, it was warm and the bottom was smooth. Headed back to the beach house after several hours at the beach on Ocracoke. Did our usual evening stuff and went to bed..

Thursday the 26th: Next to last day of Vacation. The guys and girls split up. I went with my dad, my father-in-law, and my uncle to Kill Devil Hills to see the Wright Brothers' memorial and museum. It was very interesting and very neat to walk on the grounds where flight was discovered. Afterwards headed back to the house and just pretty much hung out at the pool. Before dinner, Stacey, her parents, and myself drover 2 miles down the road to walk out on the world famous Rodanthe Pier. The same pier where parts of the movie (Nights in the Rodanthe) was filmed. (I thought to myself "gee, Richard Gere walked here!") It was our turn for dinner this night and we made, Italian Sausage with onions and peppers, roasted sweet & white potatoes and steamed green beans...

Friday the 27th: The last day of vacation just a beach day. However we drove to the town of Frisco about 30 minutes down Rt. 12 to find a better beach than the one by our house. We weren't disappointed. While the waves were not as good as the beach at Ocracoke, the water was warm and the sand smooth. After being at the beach several hours we returned to the house to get cleaned up for Dinner at the Down Under. The Down Under is an Australian themed restaurant, where they actually serve Kangaroo meat. Unfortunately for us they were out of Kangaroo burgers but, they did have the Kangaroo bites, which is essentially grilled sirloin tips but from Kangaroo and not beef. After dinner packed up our stuff and watched Jaws, a perfect beach movie.

Saturday the 28th and Sunday the 29th: Drove back to Delmar to the hotel we stopped at on the way down. Ate dinner at Bob Evan's (hadn't been there in forever). Woke up Sunday morning, left the hotel at 7:30 am, was home in Endwell at 1:30....Vacation over till next year...

Vacation Continued...

I forgot to mention on the previous post, that on Sunday I had lost my wedding band when a big wave sent me tumbling head over heals, I was none to thrilled...While it still irks me, nothing I can do about it, and it doesn't change anything. While it is not the same I will attempt to look for a new one when I return home.

Monday the 23rd: After Uncle Jim arrived, we headed toward the the famous white and black striped Cape Hatteras Lighthouse. Myself, my parents and my uncle all walked up the 257 step lighthouse to the top to see the gorgeous views. Stacey was bummed cause with her being pregnant we were worried she could get over heated doing the climb, as it was 85 degrees inside. Drove to the end of the island to Hatteras Village to check out the ferry terminal, which is where we will be going Wednesday to the Island of Ocracoke. Went to the beach for a little while after we returned and the did the usual evening stuff.


Tuesday the 24th: Tuesday was basically a wash out day, it rained all morning stopping early afternoon. While the sun never came out we did make it down to the beach, where it was breezy, but we attempted to make the best of it. I dug a big hole in the sand but, didn't really get in the ocean, still a little too timid after the other day. Afterwards just retreated to the beach house and walked the beach later after dinner.

Vacation so far..

Finally getting to posting about Vacation to the Outer Banks

Friday the 20th: Left from Endwell at 7:30 am and proceeded southward towards our destination of the day, Delmar, MD. Stopped at the Dogfish Head Brewery in Milton, DE arrived around 2:40 for the 3pm tour. Proceeded to our Hotel in Delmar to check in. From there we headed down the road to Salisbury, MD for a minor league baseball game. The Hagerstown Suns taking on the Delmarva Shorebirds. The Suns won it in the 13th inning, but we had left after the 11th so we missed the fireworks, oh shucks, more traveling the next day.

Saturday the 21st: Left Delmar by 9am to head towards our Beach House in Waves, NC. Drove over the 23 mile long Chesapeake Bay Bridge and stopped at the lookout pier about a mile from the end of the bridge. Drove a few more hours in heavy traffic to finally reach our Beach House around 5:45. Did not do much that evening, Stacey got crabs at Dirty Dick's Crab House, she has a
t-shirt to prove it. Walked the beach a little bit which is a short walk from our house and came back hung out and went to bed.

Sunday the 22nd: The only thing we did today was hang out at the beach, nothing real special to report.

Introduction

My umpteenth attempt at doing a blog but, what they hey?

With so much stuff going on in our lives, I am going to give it another go.

Friday the 20th, we leave for a week + to the Outer Banks of North Carolina with a night stop over in Delaware. I will be Chronicling the trip in a journal and will be posting our exploits at some point. This will be our last vacation with out kids for a while, as we are expecting around March 11th of next year, so we intend to have a blast, with plenty of r & r.

So stay tuned and check back often.
